Tacos de desayuno del suroeste

Dale un toque a tu rutina de desayuno con estos tacos fáciles y saludables. Los pimientos son ricos en nutrientes, los frijoles negros añaden fibra y el jalapeño añade una buena dosis de vitamina C. Consejo: Retira las semillas y la membrana interior del jalapeño para reducir el nivel de picante.

Ingredientes

  • 4 tortillas de maíz de 15 centímetros
  • 2 huevos grandes
  • 1 taza de frijoles negros sin sal añadida
  • 1 taza de pimientos mixtos picados
  • ½ taza de cebolla picada
  • 1 chile jalapeño picado
  • 2 cucharadas de aceite de oliva
  • 2 cucharadas de condimento para tacos Mrs. Dash
  • ½ cucharadita de sal

Direcciones:

  1. En una sartén, añade los frijoles, los pimientos, la cebolla, los chiles jalapeños, el aceite de oliva, el condimento para tacos y la sal. Cocinar a fuego medio-alto hasta que las verduras estén bien cocidas.
  2. Rompa los huevos en la sartén y luego revuélvalos junto con la mezcla de judías y verduras.
  3. Rellena cada tortilla de maíz con la mezcla de huevos revueltos y luego sirve.
