Ensalada de pollo a la barbacoa

Cuando se te antoje una barbacoa, pero quieras algo ligero, ¡esta ensalada dará en el clavo! Esta ensalada está llena de nutrientes y crujientes gracias a las verduras, el maíz, los pepinos, los pimientos y las cebollas. Más fibra significa menos hambre entre las comidas, lo que puede ayudarle a mantener sus objetivos de nutrición.

Ingredientes

  • 4 onzas de pechuga de pollo sin piel
  • 3 tazas de ensalada mixta
  • 1 ½ tazas de picatostes bajos en sodio
  • 1 taza de maíz sin sal añadida, escurrido
  • 1 taza de pepinos picados
  • ½ taza de pimiento rojo picado
  • ½ taza de cebollas picadas
  • ¼ de taza de salsa BBQ
  • 2 cucharadas de aceite de oliva

Direcciones:

  1. Rocíe una sartén con spray antiadherente para cocinar. Cortar el pollo en cubos pequeños. Añadir el pollo y las cebollas a la sartén. Cocinar a fuego medio-alto hasta que esté completamente cocido.
  2. Añade todos los ingredientes en una ensaladera grande. Mezcle todo hasta que esté bien mezclado, y luego sirva.
